happy st. patrick's day

today to help get all of teachers in the mood for st. patrick's day we made them lucky leprechaun cookie bark to let them know how lucky we are to know them .. yummy!
here's the recipe if you want to make it, it's super easy peasy!
14 whole oreos, broken up. we used the mint ones with the green filling. we also broke up & put in a few thin mint girl scout cookies we had left over.
1 C pretzels, broken into pieces. we used the small stick pretzels
1 C peanuts
1 lb. white chocolate or milk chocolate, almond bark or melts. to mix it up we made a batch of both white & milk chocolate.
1 C green m&m's.
shamrock sprinkles or green and white colored sprinkles.
cover a large cookie sheet with wax paper. spread broken cookes, pretzels and about 3/4 C of the m&m's onto the waxed paper.  place white/milk chocolate in a container and microwave for 1 1/2 minutes.  stir and then microwave for another 30 seconds until melted and smooth.  white chocolate melts faster and burns easier than chocolate.
drizzle the melted chocolate over the cookie mixture, spreading with spatula if needed to coat evenly.  sprinkle remaining m&m's and colored sprinkles over the chocolate while it is still wet.  do not let it harden.  place cookie tray into refrigerator until set and firm. Remove and gently break bark into small pieces. store in air tight container.
one thing we weren't to happy about was that both livi & i had to wear red shirts today for different class projects. don't worry though we had on green socks, green underwear & big green bows in our hair so we didn't get pinched! then for dinner daddy got us our favorite cane's chicken because they were serving green lemonade for st. patrick's day! it was so delicious & the color green was perfect!
hopefully next year we'll be able to be decked out from head to toe in green so we can be leprechauns for the day... keep your fingers crossed!
